Bob Bruso puts a lifetime of influence into the fresh food experience that makes Robert’s Italian Restaurant and Deli a local favorite. I mean, when one basically grows up in his neighborhood NY pizzeria, it shapes a guy. His first job at 12 was working for Freddie Manocchi, a crotchety old cook who taught little Bobby about made-from-scratch menus. His Italian grandfather, also a great cook, instilled these values further in teaching him to make delicious, homemade sauces. Working under these and other great New York chefs, Bob developed his own culinary signature that always, always starts with fresh ingredients.

25 years ago, Bob brought his authentic New York Italian cuisine to Colorado when he opened Robert’s. He’s built a loyal following and a solid brand with his broad menu, family-friendly atmosphere, and Bob’s stern insistence on quality. Robert’s serves fresh food made in-house with ingredients from local suppliers. The pizza dough, pasta and pizza sauces, sandwich rolls, bread, and salad dressings are made from scratch daily. Dishes are made to order. And if you’re lucky, you might just get a gruff Freddie-Manocchi-inspired greeting from Bob when you come in.
